The amazing parfait on the left is an appetizer, not dessert. From the bottom, it held green pea mash, squid in its ink, and a potato cream. Next photo is a sardine escabeche on brioche toast topped with onions fried to their max sweetness. On the right is a clam pasta baked in paper for 5 minutes, just long enough to open the clams. What concentrated flavor! First time I had a pasta like this! Have to try this when I get home.
